Ingredients

Chili

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1 tablespoon garlic, crushed

  • 450g ground chicken

  • 1 teaspoon cumin powder

  • 2 teaspoons cayenne pepper or chili powder (reduce for a mild Chili)

  • 1/2 teaspoon smoked paprika

  • 1 1/2 teaspoon salt

  • 1 teaspoon oregano

  • 2 tablespoons tomato paste

  • 1 28oz can tomatoes, blended

  • 2 cups chicken broth

  • 1 bay leaf

  • 1 tablespoon brown sugar

  • 1 (540g) can black beans, drained and washed


Toppings

  • 1/2 cup full fat sour cream

  • 1/2 cup cilantro, chopped

  • 1/2 cup cheddar cheese, grated

  • 3 sprigs spring onions, chopped (optional)

Method

  1. Heat the olive oil in a large pot or cast-iron pan over medium heat.

  2. Sauté the onion and bell peppers for 8-10 minutes until translucent.

  3. Add the garlic and cook for 1 more minute.

  4. Stir in the ground chicken, cumin, cayenne pepper, smoked paprika, salt, and oregano. Cook for about 4 minutes, stirring constantly, until the meat begins to turn white.

  5. Mix in the tomato paste, blended tomatoes, chicken broth, bay leaf, brown sugar, and black beans. Reduce the heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally. Add more broth if you prefer a thinner consistency.

  6. Serve hot in bowls. Add toppings as desired, and pair with crusty bread, sour dough bread or tortilla chips.
