Thai Coconut Noodle Soup

Thai Coconut Noodle Soup


Ingredients

1 tablespoon coconut or olive oil 1 cup thinly sliced onions 2 tablespoons finely chopped ginger 3 cloves finely chopped garlic 1 red pepper cut into thin slices 3/4 cup thinly sliced mushrooms 4 full tablespoons (measuring spoons) Thai red curry paste (jar) 1 carrot cut into thin circles 3 vegetable bouillion cubes and 6 cups of hot water 1 can  (398ml) coconut milk 450g Shanghai noodles boiled according to the package instructions* 1/2 cup canned corn 1/2 teaspoon salt (more if needed) 1 tablespoon brown sugar 1/2 tablespoon soy sauce 1/2 cup chopped cilantro 1/4 cup of chopped spring onions 3 tablespoons fresh chopped basil leaves (optional) 1 lime cut into 4 or slices (optional) 3 tablespoons roasted salted peanuts, crushed (optional but recommended) 1 teaspoon chilli flakes for spice (optional but recommended)

Method

1.Heat oil in a thick based pot, or deep pan over medium heat. Add onions, ginger and garlic and saute until the onions are translucent, around 4-5 minutes, stirring frequently. 2. Add the mushrooms and half the peppers. Saute for a further 3-4 minutes. Add Thai curry paste and saute for around 1 minute, stirring frequently. 3. Add bouillion cubes, coconut milk and carrots, bring to a simmer, then simmer for 10 minute (this step takes around 15 minutes in total). 4. Stir in the brown sugar, corn, soy sauce, remaining peppers and basil. Then add the noodles and mix well. Taste test to see if you prefer more salt and it's ready! 5. Garnish with a sprinkle of cilantro, spring onions, crushed peanuts and chilli flakes (if using). Enjoy with spring rolls or even just on it's own! Happy cooking! *You can also use rice noodles or chow mein noodles. Tip: For protien you can stir in shredded chicken, cooked shrimp or lightly fried firm tofu.
