Ingredients

For the Pudding:

  • 3 tablespoons honey, warmed

  • 1 cup milk (room temperature or warmed)

  • 2 teaspoons vanilla extract

  • 4 tablespoons chia seeds

  • 1 teaspoon cinnamon powder

For the Sauce:

  • 3 tablespoons maple syrup

  • 3 tablespoons peanut butter

  • 1/2 teaspoon vanilla extract

For the Toppings:

  • 5 tablespoons honey or vanilla yogurt

  • 1/2 banana, sliced

  • 1 teaspoon Granola

Method

1. Prepare the Chia Pudding: In a bowl, whisk together the honey, milk, vanilla extract, chia seeds, and cinnamon powder until well combined. Ensure there are no lumps. Cover and refrigerate overnight or for at least 8 hours to allow the chia seeds to absorb the liquid and thicken into a pudding.


2. Make the Sauce: Combine the maple syrup, peanut butter, and vanilla extract in a small pot. Warm over medium heat, stirring until the mixture is smooth and creamy.


3. Assemble the Pudding:

  • Whisk the chilled chia pudding to ensure it's evenly mixed and spoon equally into 2 serving cups.

  • Layer on the yogurt, sliced bananas and drizzle a generous amount of the warm peanut butter sauce.

  • Finish with a sprinkle of granola for that irresistible crunch.
