Lemon and Lavender Panna Cotta with a hint of Cardamom

Ingredients

Ingredients

  • 2 cups whipping cream

  • 1/2 cup whole milk

  • 1/4 cup honey

  • 1/2 teaspoon dried culinary lavender

  • Zest of 1 lemon

  • 3 green cardamom pods, lightly crushed

  • 2 ½ teaspoons powdered gelatine (one 7g packet)

  • 3 tablespoons cold water

  • 1 teaspoon vanilla extract

  • Pinch of salt For Garnish

  • Drizzle of honey

  • Fresh berries (optional but blueberries or blackberries work well)

  • Edible flowers or a light dusting of lemon zest (optional)

Method

  1. Grease ramekins, molds or bowls with a neutral oil.


  1. In a saucepan over medium-low heat, combine the cream, milk, honey, lavender, lemon zest, and crushed cardamom. Stir gently and bring to a low simmer (do not boil). Remove from heat, cover, and let steep for 10–15 minutes to allow the flavours to meld.


  1. In a small bowl, sprinkle the powdered gelatine over 3 tablespoons of cold water and let it sit for 5 minutes until it softens.


  1. Strain the infused cream through a fine-mesh sieve to remove the lavender, lemon zest, and cardamom. Reserve 1/4 cup to pour over the top when serving. Return the cream to the saucepan. Over low heat, whisk in the bloomed gelatine until fully dissolved. Now stir in vanilla extract and a pinch of salt.


  1. Pour the mixture into greased ramekins or serving glasses. Refrigerate for at least 6 hours (or overnight) until set.


  1. To un-mold, dip the ramekins in warm water for 3-5 minutes, then invert onto a plate. Alternatively, serve directly in ramekins/glasses. Garnish with a drizzle of honey, lemon zest, fresh berries, or edible flowers. Pour warmed reserved cream over the top if preffered. Enjoy!
