Melt the ice cream in a pan over medium heat, stirring constantly with a spatula. 3. Once the ice cream is melted and hot, add melted butter (optional) and the sugar and stir until dissolved (about 1-2 minutes), mixing constantly. 4. Add the milk powder 1/2 cup at a time and stirring in-between, food coloring, and cardamom, continuing to stir. The mixture may look clumpy at first, but keep stirring and pressing the lumps against the pan—eventually, they will dissolve. 5. Continue stirring until the mixture forms a ball and has a texture similar to fresh play dough (if you remove it too soon the texture will be chewy). This should take 15-20 minutes, though the time may vary depending on your stove and pan. Be sure to keep stirring! 6. Transfer the mixture into the prepared pan, pressing it down with a spatula until smooth and even. You can also use the back of a cup or bowl to press the surface flat. 7. Allow to cool fully. 8. Once cooled, turn the barfi out onto a cutting board and cut into 1.5-inch squares. Store in an airtight container. Serve at room temperature .
