Chinese Chicken Wrap with Peanut Sauce

Ingredients

Peanut Sauce Ingredients

  • 3 tablespoons olive oil

  • 1/4 cup peanut butter

  • 1 tablespoons rice vinegar

  • 2 tablespoons soy sauce

  • 1 tablespoon toasted sesame oil

  • 1/4 cup honey

  • 1/4 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 teaspoon grated ginger

  • 1 grated garlic clove


Wrap Ingredients

  • 3 cups coleslaw

  • 1 cup shredded carrots

  • 1/2 cup freshly chopped cilantro (optional)

• 1 chopped Thai green chilli (optional for the heat lovers)

  • 4 large white tortillas


Chicken Ingredients

  • 1 tablespoon oil

  • 2 chicken breasts, cut into small cubes

  • 1 teaspoon garlic, finely chopped or crushed

  • 1 teaspoon ginger, finely chopped or crushed

  • 1 teaspoon salt

  • 1 teaspoon rice vinegar

  • 1 tablespoon toasted sesame oil

  • 2 tablespoons oyster sauce

  • 3 tablespoons light soy sauce

• 1 teaspoon brown sugar, packed

Method

  1. Prepare the Peanut Sauce Mix together all the peanut sauce ingredients until smooth. If you have peanut butter lumps, microwave for 15 seconds and mix again.


  1. Prepare the Vegetables In a bowl, mix the coleslaw, shredded carrots, peanuts (if using), chilli (if using) and peanut sauce (reserving 2 tablespoons to pour over the top). Allow to rest while you prepare the chicken, it will release juices).


  1. Prepare the Chicken Heat a pan or wok over medium-high heat. Add oil until warm, then add the chicken, garlic, salt, and ginger. Fry until cooked (around 7-8 minutes). Add the remaining chicken ingredients and sauté for another minute, then transfer to a dish.


  1. Assemble the Wraps Squeeze the vegetable mix gently to remove extra juices and divide the mixture and chicken evenly among the tortillas. Top with cilantro and peanut sauce, then wrap tightly).


  1. Serve Cut each wrap in half and secure with a toothpick to keep them intact. Enjoy!
