Ingredients

  • 2 green plantains

  • Oil spray

  • 2 tablespoons lime juice

  • 2 teaspoons salt

  • 2 teaspoons chilli powder

• 2 teaspoons sugar

Method

  1. Peel and slice the plantains: Remove the peel from the plantains (cut off or peel), then create thin slices using the side of a grater or a mandolin.

  2. Soak and Dry: Prepare a bowl of cold water, add the lime juice and soak the slices for 30 minutes. Pat the slices dry with a paper towel and let them rest for 10 minutes.

  3. First fry: Spray the air fryer basket with oil. Lay the plantain slices in a single layer (about half the batch) and spray the tops with oil.

  4. Cook: Air fry at 390°F for 6 minutes. Flip the slices, spray again, and cook for another 6 minutes.

  5. Season: Transfer the hot chips to a bowl. Add half the salt, half the chili powder, and half the sugar. Mix well with a spoon to coat evenly while hot. Keep the chips uncovered until completely cooled. Repeat for the second batch.


Tips: 

  • They soften over time, so enjoy fresh!

  • Green plantains produce a crunchy texture, while yellow plantains are sweeter and produce a chewy texture.

  • Plantains are soaked to achieve a crispy texture, and lime juice is added to prevent browning, as plantains begin oxidizing once peeled.
